Six Great Holiday Side Dishes Featuring Apples

Ever since I had a lovely braised zucchini side dish at Kelsey's restaurant years ago, I've been trying to replicate the recipe and yesterday I did it!
We got some great deals on the mark down rack at LaMantia's Market in Lindsay, plus a 10 lb bag of apples, and it all came together to make this side dish of braised apples with zucchini and peppers. This is a very quick and easy dish.

Braised Apples Zucchini and Peppers

Ingredients per Person:

1 Ida Red Apple cut into 1/4 inch wedges.

1 small yellow zucchini - sliced in 1/8 inch slices with peel

1/4 green pepper - in thin strips

1/4 red pepper - in thin strips

2 T unsalted butter

1 t red wine vinegar

Method

1. Melt butter in skillet to beurre noisette stage. 
2. Add thin strips of pepper. When it changes to a bright tone,
3. Add apple wedges. When tender -
4. Add zucchini. When tender remove from heat and immediately
5. Sprinkle with red wine vinegar . 

Enjoy! This recipe also tastes fabulous inside a pita or as a topper on crackers as an hors d'oeuvres. Though it is quite moist and needs a liner of lettuce.
